Aubergine salad Mount Athos Recipe

A delicious spread of baked pieces of peeled aubergines, roasted red sweet peppers and onions - marinated with extra virgin olive oil, vinegar and spices. Combine with steaks, pour on baked potatoes or make delicious bruschetta and sandwiches!
