The Mediterranean climate of our region in Boeotia, which is so close to the sea and to Mount Elikon, gives our bees the chance to make a fine thyme honey.

Wild thyme occurs in dry, rocky Mediterranean areas and is usually of a biological nature, although there are no established certification standards. The percentage of thyroid pollen to be classified as thyme honey according to Greek legislation is only 17%. Hemelia honey is usually (according to chemical analysis) 60% thyrotropin.

Thyme honey is famous for its aroma and flavor and is produced in the summer months. The color of thyme honey is light orange to red, and beige to brown when crystallized. It is a very strong, strongly aromatic honey with a resinous, botanical, slightly spicy flavor. Its aroma resembles tropical fruits, plums and white pepper. The taste is persistent, staying in the mouth.
